Olives is an Italian casual dining brand built around a simple philosophy: Pizza & Fun. The brand specializes in handcrafted Italian pizza, using mid-to-high-quality ingredients while maintaining an accessible mid-range price point—roughly 55–65 RMB per person. The goal is simple: to offer a genuinely Italian dining experience with authentic European ingredients, professional cooking standards, and a relaxed, elegant environment suited for family meals, casual dates, and everyday social dining.

What sets Olives apart is its commitment to the traditional Italian Dome Oven. Each pizza is handmade and baked at high temperatures, producing a crust with the signature leopard-spotted char and a chewy, airy texture that only a proper Italian oven can achieve. The Challenge: The Limits of Traditional Dome Ovens

Olives built its reputation on authentic Italian pizza, baked in a traditional dome oven using wood fire. It’s the method that gives their pizza its signature leopard-spotted crust and airy, chewy texture—and it’s a major reason customers choose Olives over ordinary pizza chains.

But as the brand grows, the traditional dome oven is becoming a bottleneck:

• Heavily dependent on chef skill. Wood-fired dome ovens demand years of experience to master. The chef must constantly monitor the fire, rotate the pizza by hand, and judge the exact moment to pull it out. This level of craft is hard to teach, hard to scale, and hard to replicate across multiple locations.

• Uneven temperature. A wood-fired dome oven has hot spots and fluctuating heat. The floor temperature, the dome temperature, and the fire itself all shift constantly—making it nearly impossible to guarantee an even bake every time.

• Zero margin for error. In a dome oven, a few extra seconds can be the difference between a perfect pizza and a burnt one. There is no buffer, no consistency—one distracted moment and the pizza is wasted.

• Inconsistent quality across stores. When quality depends entirely on who is working the oven that day, delivering the same pizza experience across every Olives location becomes extremely difficult.
